Chocolate truffle petit four

Why not try something different this valentines day. Add some spontaneity and creativity by making your valentine some homemade dark chocolate truffles.

Ingredients 
 
350g/12 oz Double cream
150g/5 oz Plain chocolate – chopped into small pieces 
25g/1 oz Unsalted butter – cubed 
Champagne or Prosecco to taste 
 
Method
  1. Place the cream in a pan and heat to simmering stage, just below boiling point. Add the chocolate and stir to combine with the cream.
  2. Once combined, add the butter and continue to stir, finally add the alcohol to taste.
  3. Allow the mixture to thicken until it is suitable to pipe into the design of your choice to be served in petit four or miniature cake cases. Finish with a dusting of cocoa powder.

Alternatively omit one third of the double cream and make white chocolate truffle add dried strawberries and roll into truffle shapes when set.  Or  flavour with almond liqueur and roll in flaked almonds.
