With Father's Day fast approaching, we have the ideal recipe to treat your father this Father's Day.  This Mocha Brownie recipe has been perfected in our Provisio kitchen to ensure delicious, mouthwatering results each time.  We hope your Father enjoys them.  

Mocha Brownie Recipe

 

You will need 1 x swiss roll tin 30cm x 20 cm lined with baking parchment.

 

Heat the oven to 175 C

 

220g plain chocolate preferably 70% - the best you can afford, chopped into small pieces

110g unsalted butter

250g light brown soft sugar

4 free range eggs, lightly beaten together

85g plain flour with a pinch of baking powder

85g ground almonds

110g pecans

110g milk chocolate drops

2 heaped teaspoons good instant coffee

 

  1. Melt the chocolate, butter and coffee together in a bowl over a pan of simmering water.
  2. Allow to cool then add the sugar and cream together well.
  3. Beat in the eggs, flour and almonds and stir in the nuts.
  4. Pour into prepared tin and using a palette knife ensure the mixture is equally spread along the base of the tin.
  5. Sprinkle the chocolate drops on top and then bake in the oven for about 20 minutes.  Take care not to overcook the brownie.  Test with a skewer, they should have a moist and fudge like centre.
  6. When cool cut into squares.
